Vermicelli Payasam is a classic dessert made with vermicelli, milk and sugar. It is prepared on special occasions and festivals. It is rich, creamy and tastes heavenly.
Heat 1 tbsp ghee in a pan. Fry cashews and remove. Keep aside.
Fry raisins and remove.Keep aside.
Add one more tbsp of ghee and fry 1 cup vermicelli till golden.keep aside
Boil 500 ml of milk. To this add 200 ml of water and boil further. You can adjust this water added depending on how thick or thin the final payasam is needed.
Add the fried vermicelli and cook on medium flame till vermicelli is completely cooked. keep stirring every one minute
Add 1/2 cup sugar and mix
Add fried cashew nuts and raisins and mix
Add 1 teaspoon cardamom powder and cook on medium flame for 5 minutes
Vermicelli payasam is ready to serve.
