  • Basmati Rice-2 cups
  • potatoes-2
  • carrots-2
  • french beans-10
  • tomato-1 big
  • onions-2
  • garlic ginger paste-2 tablespoon
  • green chillies-3
  • Cloves-5, Cardamom-5, cinnamon-2, bay leaf-5, Aniseed(Sombhu or big cumin)- 1 tsp
  • turmeric powder -1 tsp, coriander powder-2 tsp, chilli powder-2 tsp, masala powder-2 tsp
  • Salt to taste
  • coriander leaves - 1 tablespoon, curry leaves - 1 tablespoon, Mint leaves - 2 tablespoon
  • oil - 2 tablespoon
  • ghee - 1 tablespoon


  1. Soak Basmati rice. Heat oil and ghee in a deep vessel
  2. Fry cinnamon, cloves, cardamom, bay leaf, Aniseed
  3. Fry green chillies
  4. Fry curry leaves, mint leaves
  5. Fry garlic ginger paste
  6. Add onion and salt ...Fry for 3 minutes till onion turns golden
  7. Add tomato. Fry for 3 minutes till cooked
  8. Add pieces of carrot, beans and potato...cook covered on low flame for 10 minutes till they become soft
  9. Add turmeric powder, coriander powder, chilli powder and garam masala powder, fry well for 2 minutes
  10. Add soaked basmati rice. mix well.
  11. Add 3 cups water. cook covered for 15 minutes.
  12. Vegetable Biryani is ready.. Served with onion raitha.
