Mixed vegetables kurma is common but potato kurma tastes good with chapatti, poori, dosa and even with rice.It is very simple and easy recipe.
In a deep pan, heat oil ,add cinnamon, cardamom, fennel seeds, cloves and bay leaf and fry.
Fry green chillies, curry and mint leaves.
Add chopped onions, little salt and fry till onion turns golden brown.
Now add potato pieces, turmeric powder, chilly powder, coriander powder, masala powder and fry .
Add ginger garlic paste, mix well, lower the flame and cook covered for 10 minutes till potatoes becomes soft.
Now add water and cook covered for another 10 minutes on a low flame.
Add Coconut paste and mix well. Garnish with coriander leaves and cook for another 5 minutes on a low flame.
Serve it with roti, poori, dosa or rice.
