Coriander Chutney is a simple ,healthy and yet a tasty recipe to go with Idli, dosa and even with pakoras and samosa.

Coriander - 1 bunch( chopped finely)
Tamarind - small lemon sized ball of tamarind ( soaked in warm water )
Green chillies - 3 no's
Urad Dhall - 1 tablespoon
Asafoetida - 1/2 tablespoon
Oil - 1 tablespoon
Mustard - 1/2 tablespoon
Salt - As per the requirement.
Wash the Coriander leaves thoroughly in water.
In a blender, add Coriander leaves, green chillies, tamarind, salt and blend it to a fine paste.
In a pan, heat oil, add mustard seeds when it splutters, add Urad dhall , asafoetida and fry it for a minute.
Now add grinded coriander paste and fry for 5 minutes
This can be refrigerated and used for Idli, dosa and rice instantaneously.
